Production Details Old, unirrigated bushvines yielded 5-6 tons/ha of concentrated fruit. Fruit was harvested over 3 pickings at increasing sugar levels. The first picking underwent 10 days of cold maceration below 10C followed by a short, hot fermentation of 3 days before pressing. Extensive partial carbonic maceration was used, with crushed grapes placed on top of whole bunches. The wine was bottled after 12 months in 225L 2nd, 3rd, 4th fill and older French oak barrels.
