Production Details Hand-picked early morning in lug boxes. Double sorting: whole bunches then berries to ensure only best grapes reach fermentation. Natural fermentation at controlled temperatures with no additives. Extraction via remontage, carefully monitored to prevent over-extraction. Matured 18 months in French oak barrels (40% new oak, 60% aged). Biodynamic practices in vineyard and winery. Ready to drink now but will develop over 8 years. Decanting recommended.
