Production Details Noble late harvest Sauvignon Blanc. Grapes left on vines until mid-March with Botrytis development. Hand-picked at 43 Balling with careful bunch selection for clean Botrytis rot. Low yield ~1 ton/ha. 12-hour skin contact, whole bunch pressed into stainless steel. Slow fermentation at 14-16°C for 12 days. Matured 5 months in 2nd fill French oak barrels, lightly fined, bottled. Only two barrels produced.
