Production Details Fruit came from two selected Helderberg foothill blocks planted in 2007 and 2008, with elevations ranging from 240m to 316m. Grapes were handpicked in cool early mornings, given 3 hours of skin contact, pressed for lower juice recovery, settled clear for two days, then inoculated with a selected yeast strain. Fermentation took place in stainless steel tanks at 12-15C, followed by lees contact with regular stirring to enhance mouthfeel.
