Production Details Official producer technical page states the grapes were sourced from one Darling site divided into bottom, middle, and top sections, with two sections picked five days later than the rest to capture richness and greenness. Grapes were picked in bins during the cool early morning, given two to three hours of skin contact, then pressed gently for lower juice recovery. Juice settled clear for two days before inoculation with a selected yeast strain, fermented in stainless steel tanks at 13C, and was kept on the fine lees with regular stirring to build mouthfeel.
