Production Details 0.78 hectare single vineyard, 29-year-old vines. Whole bunches gently crushed without destemming. 48 hours settling in stainless-steel at 12-14°C. Fermented in French oak: 40% new, 40% second-fill, 20% third-fill. One-third natural yeast fermentation, remainder inoculated. 12 months aging with weekly bâtonnage (lees stirring).
