Production Details Hand pruning and harvesting. Hand sorting of grape bunches and loose berries. Lightly crushed after destemming. Fermented in stainless steel with skin contact (2-3 weeks post-fermentation). Completed malolactic fermentation in barrels. 18 months total oak aging with regular racking. Vineyard blocks: D2 (26 years old) and J13 (15 years old) from Jonkershoek Valley.
