Production Details Old Vines Chardonnay from the Du Bois family farm Sonop on the cooler hillside slopes of Koelenhof, Stellenbosch. Fruit came from a mature 35-year-old vineyard described by the producer as one of the oldest Chardonnay vineyards in South Africa. The wine was pressed whole bunch directly to French oak barrels with no additions, natural fermentation started after five days and completed in 30 days, then the wine spent 10 months on the gross lees before bottling with occasional lees stirring and minimum intervention.
