Production Details 7 days on skins in rotor fermenters at 25C. Aged 24 months in new 225 litre French oak barrels, 75% Classic and 25% Thimeo from Tonnellerie Bossuet. Low rainfall, drier ripening season with cooler nights and warm, dry days during picking. Smaller berries were harvested at optimum phenolic ripeness.
