Production Details All grapes were handpicked. Seventy percent of the Shiraz and all of the Mourvedre and Grenache were hand sorted and destemmed prior to fermentation. Traditional fermentations took 15 days at 20-25C in automated rotational tanks which submerge the skins gently. Thirty percent of the Shiraz was fermented carbonically to add complexity. Malolactic fermentation for all varieties took place in large format barrels and the wine matured for a further 12 months before being blended, fined and filtered.
