Production Details The Weather Station is picked from the highest vines on the farm, above 200m and 9km from the False Bay coastline. Grapes were handpicked early in the morning while temperatures were still cold. Bunches were hand sorted, destemmed and gently crushed. Eight hours of skin contact enhanced aromatic extraction before the juice was settled enzymatically and racked into fermentation tanks. The wine was kept in stainless steel tanks for 4 months at 13C with weekly lees stirring.
