Production Details The grapes were handpicked from Block 5, stored overnight in the cold room, then hand sorted and destemmed. Whole berries were cold soaked for 4 days before a 15-day fermentation at 18-25C with a planned pump-over schedule. Malolactic fermentation was completed in stainless steel tanks before 16 months of maturation in 25% new French oak, 5% new American oak and the remainder in older barrels.
