Production Details The grapes were handpicked from Block 5 and stored overnight in the cold room, then hand sorted and destemmed. Whole berries were cold soaked for 4 days before fermentation, which lasted 15 days at 18-25C with a planned pump-over schedule. Malolactic fermentation was completed in stainless steel tanks before a 16-month maturation period in 25% new French oak, 5% new American oak and the remaining wine in older barrels.
