Production Details Viognier (3%): partly fermented in stainless steel, completed fermentation and malolactic fermentation in 60% new French oak 225L barrels. Red varieties (Shiraz 74%, Mourvèdre 23%): 4 days cold maceration, fermented in stainless steel, then completed malolactic fermentation in 70% new oak 225L barrels. After blending: matured in 40% American and 60% French oak for 12 months.
