Production Details Hand harvested in early morning, cooled overnight at 3°C, bunch and berry sorted, soft destemming to preserve intact berries and prevent harsh phenolics, 5 tons destemmed to stainless steel tank for 1-week maceration period, spontaneous fermentation with yeast inoculation, pump-overs 3 times daily during fermentation, post fermentation drained off skins and lightly pressed, transferred to steel tank, settling, racked to 500L French Oak Barrels (2nd fill), no malolactic fermentation.
