Production Details Hand-sorted and lightly crushed into stainless steel fermentation tanks. 3-day cold soak before natural fermentation. Three pump overs per day during fermentation with 2-3 weeks extended skin contact. Malolactic fermentation conducted in French oak barrels. Aged 12 months in French oak, racked every four months on average.
