Production Details Trellised Bottelary vineyard planted with the CF1 Cabernet Franc clone in 2004. The site lies 16.5 km north of False Bay and 22.5 km east of Table Bay, with strong ocean influence. Whole berries were cold-soaked for three days before primary fermentation in tulip-shaped concrete fermenters, with pump-overs up to three times per day and fermentation peaking at 28 C. Spontaneous malolactic conversion took place during 11 months of maturation in 1000-litre French oak vats. The wine was racked once, two weeks before bottling. Vintage note: winter cold was lower than 2022, December thunderstorms drove vegetative growth and disease pressure, and a cool spell slowed an otherwise early harvest. Maturation note: this wine will be at its most expressive between three and five years. Total production: 3,439 x 750ml and 55 x 1.5L.
