Production Details Hand-picked in the early morning at Cavalli in three separate pickings. Grapes were crushed, pressed and settled overnight for juice clarity. The juice was inoculated with two different yeasts, one for expressive fruit and one for a fuller mouthfeel. Fermented in stainless steel tanks with occasional lees stirring post-ferment, then blended after just under 2 months on its lees and prepared for bottling.
