Production Details Hand-harvested fruit with 60% whole-cluster fermentation in open-top stainless steel. Fermented with spontaneous and house-cultured yeasts, then matured for 14 months with 60% in concrete and 40% in new 400L French puncheons. Aged on fine lees, received one small sulfur addition in winter, and was bottled without fining and with light sheet filtration.
