Production Details Single-vineyard trellised Chardonnay from the foothills of the Helderberg facing False Bay in Firgrove, Stellenbosch. The grapes were picked at optimal ripeness, cooled overnight to 4 degrees Celsius, then pressed as whole bunches. The juice underwent spontaneous fermentation in older French oak with 40% new barrels. One sulfur addition was made in deep winter, then the wine spent 10 months on the lees before blending and bottling.
