Production Details Hand-harvested at 35-40 Balling in April (Botrytis cinerea/noble rot). Destemmed prior to pressing with extended skin contact. Cool-fermented in temperature-controlled stainless steel at 16°C for six weeks. No wood maturation. Blended, stabilised, and sterile-filtered before bottling.
