Production Details 100% Sauvignon Blanc from Old Vine Certified heritage vineyard planted 1983. Bunches manually desiccated (pinched) on vine to raisinate berries. Destemmed and pressed at coldest possible temperatures. Two days settling before racking. Slow fermentation in stainless steel tanks at cold temperatures over three months. Approximately six months bottle aging before release.
