Production Details Simonsberg-Stellenbosch Chenin Blanc from older organically farmed vineyards. Hand-picked from four Chenin blocks over a three-week period. Naturally fermented in open top tanks with extended skin contact during fermentation. No enzymes, yeast nutrients or fining agents added. After pressing, some portions were aged in concrete shaped eggs and larger format barrels for 11 months without sulphur on the gross lees. Production volume: 3,150 cases (6 x 750ml).
