Production Details Grapes are hand harvested at night from 2am and delivered before sunrise. The USVIT 8-7 rootstock was selected for chalky soils, and the CY55 clone delivers low yields with concentrated tropical fruit and vanilla spice flavors. The grapes are gently crushed, the free-run juice is racked to stainless steel tanks, and fermentation begins with selected yeasts. Before fermentation is completed, the wine is moved to new French oak barrels for barrel fermentation. After fermentation, the wine spends 6 months in barrel on the fine lees, with weekly batonage.
