Production Details Made using traditional method (Cap Classique). Unwooded component: Harvested January 2021, 14 days alcoholic fermentation, racked off lees before blending. Wooded component: Harvested January 2020, fermented in 600L Austrian oak (Stockinger Barrels), aged 12 months. After blending, cold stabilized at -3°C for 2-3 weeks. Sugar and specialized yeast added for tirage, followed by 30 months on lees before degorgement. All racking done under CO2 with minimal sulfur additions.
