Production Details Hand-harvested during early morning hours. Whole bunch pressing with fractional recovery. 50% of base wine fermented in old French oak barrels (205L, 500L, 2000L). After 5 months of oak aging on primary lees, wine was blended with stainless steel-fermented portions, stabilized, clarified, and bottled for secondary fermentation. 60 months on lees in bottle before disgorgement.
Tasting Notes
Nose: fresh citrus, green apples, pear, white flowers
Palate: fresh citrus, spice, roasted almonds, brioche, yeasty complexity
Sight: luminous greenish yellow, persistent pin-prick small bubbles, beautiful mousse
