Production Details The Jacques Bruere Cap Classique range includes a Brut Reserve, Blanc de Blanc and Cuvee Rose Brut, and is only released after a minimum of 90 to 100 months of yeast contact before disgorgement. Whole bunches were hand picked in small separate crates at 19.6 Balling. Whole bunches were emptied into the press and only the first 500 liters per ton were delicately extracted. The juice was settled in tanks, fermented, and kept on the lees for 8 months before bottling with sugar and yeast for the second fermentation. This wine was fermented in bottle and kept on the lees for 120 months prior to disgorgement. Winemakers: Jacques Bruwer and Philip Viljoen.
