Production Details 85% of this wine is from dryland bush-vine grapes planted in 1966 and 15% from vines planted in 1980 on the western side of Paardeberg. The grapes were destemmed and pressed, then left overnight to settle in stainless steel tanks. The 1966 parcel was fermented in an Italian concrete tank and the 1980 parcel in a 500 litre French oak barrel. Both parcels were left on their lees for 10 months without batonage. No commercial yeast or enzymes were used. The producer states that 85% of the wine was fermented and aged in concrete.
