Production Details 100% Shiraz from organically-grown vines aged 16 to 24 years, yielding 4 to 8 tons of fruit. Grapes were harvested early at 23 to 24 Balling. 10 to 15% were whole-bunch fermented; the balance was gently destemmed, tanked for 2 to 3 days, and underwent natural fermentation. Warmer ferments ran at 30 to 32 Celsius for 7 to 10 days, followed by 25 to 30 days of slow post-fermentation maceration. Malolactic fermentation occurred in 600-litre French oak barrels, followed by 12 to 16 months of ageing before light filtration and bottling.
