Production Details Heavenly Chaos is an opportunistic blend based on Merlot and completed with what remains in barrel after bottling the producer's other wines, so the composition changes each year. Grapes were handpicked early in the morning, cooled overnight to 14C, fermented with wild yeast in tanks with manual punch-downs, then gently pressed. Malolactic fermentation took place in older French oak barrels for 10 months. The wine was blended 14 days before bottling and only lightly filtered, so sediment may occur.
