Production Details Fruit sourced from Robertson (34%), Malmesbury in Swartland (23%), Paarl (8.5%), Napier in the Cape Agulhas Triangle (5.5%), Darling (21.5%), and Paarl (7.5%). Hand-selected and hand-picked in the early morning. Individual components were fermented separately in stainless steel tanks and alternative vessels including ceramic pots; 10% of Robertson Chardonnay fermented in traditional French oak barrels (Piece Champenoise). Traditional bottle fermentation with 39 months on lees, followed by post-remuage disgorgement and up to six months of cork maturation prior to release.
