Production Details Chardonnay fruit was sourced from three cool-climate regions: Napier (40%), Darling (33%), and Robertson (27%). Harvest was hand-selected and hand-picked in the early morning. Fermentation was predominantly in stainless steel and ceramic vessels, with a small portion fermented in traditional French oak barrels (Piece Champenoise). Individual parcels were assessed after three months on light lees. Traditional bottle fermentation followed, with 55 months of lees contact for autolytic development. Post-remuage disgorgement was followed by up to six months of cork maturation prior to release.

Nose: citrus blossom, ripe Cape lemon, delicate white fruit, chalky backbone
Palate: seaweed, chalky minerality, citrus peel, lime pith, green almond, tightly wound acidity, refined texture
