Production Details Wine of Origin Western Cape. Grapes sourced from old dryland bushvines in Darling area (Voor-Paardeberg & Darling), average vine age 20 years. Yield 4.8 tons per hectare. Unirrigated soils with unique water-releasing capacity favoring grape concentration. Hand-picked at optimum ripeness, de-stemmed, crushed and pressed after short skin contact period. Juice settled then fermented at 16-18°C in 500-liter second-fill and third-fill French oak barrels. Barrels topped up, 9 months lees contact prior to blending and bottling. 4 months bottle maturation before release. Loire-style winemaking approach.
