Production Details The grapes were all hand-picked early in the morning, loaded onto tractors and brought into our Organic cellar. The bunches were then hand-fed over a sorting table with some of the grapes being destemmed. Whole bunches and berries were placed into clay amphorae and concrete eggs for 2 weeks for carbonic maceration. The grapes were then pressed in the basket press and the juice was moved to barrel to complete fermentation. The wine spent just under 10 months in a combination of 228L and 300L barrels, ranging from 3rd to 4th fill. After which it was assembled and bottled in January 2024.

Palate: juicy, medium-weight, balanced tannic grip, mineral finish
