Production Details Grapes handpicked in early morning March into small lug boxes. Whole-bunch pressed in pneumatic press. Juice handled reductively and inoculated with Alchemy II yeast. Fermentation took 3 weeks at 12-14°C. Racked off gross lees and left for about 4 months on fine lees with stirring when needed. Crossflow-filtered and bottled.
