Production Details Cape South Coast origin from Elgin Valley and Hemel-en-Aarde Ridge fruit. Grapes were hand harvested at 21-22.8 Balling, the clear juice was decanted off settled solids, fermented with a commercial Sauvignon Blanc yeast strain at 14C, kept on gross lees for 4 months with periodic stirring, then lightly fined and filtered before bottling. Release date July 2023.
