Production Details Sourced from a mountain-plateau vineyard in Elgin 500m above sea level and 18km from the Atlantic Ocean. Hand-harvested grapes were bunch-selected in the vineyard, transported in small bins, berry-sorted again at the cellar, protected from air contact with inert gases, fermented in stainless steel tanks at 16C, and left on the lees to build mid-palate texture and a lingering finish.
