Production Details Darling Riesling from vines planted in 2007 on Hutton soil at 250 meters elevation with supplementary irrigation and 7 wire extended moveable Perold trellising. The grapes were destemmed and left on the skins for 6 hours. Only the free-run juice from the press was used for fermentation in stainless steel tanks. Fermentation was stopped at a sugar level of 12 g/L by cooling the wine to 5C.
