Production Details Darling Riesling from vines planted in 2007 on Hutton soil at 250 meters elevation with drip supplementary irrigation and 3 wire Perold trellising. The grapes were destemmed and left on the skins for 6 hours. Only free-run juice was used for fermentation in stainless steel tanks. Fermentation was stopped at 13 g/L sugar by cooling the wine to 5C before bottling preparation.
