Production Details WINE OF ORIGIN: Durbanville, Cape Town. The unirrigated single vineyard was planted in 1983 and is cooled by sea breezes from Table Bay and False Bay. Harvesting took place in two phases. The first batch fermented naturally in a 2,500 L older foudre for freshness and fruit development (36%). The later harvested component fermented naturally in first-fill (32%) and second-fill (32%) 300 L French oak barrels. Post fermentation, the wine remained on the lees with monthly batonnage before final tasting, blending and bottling about 10 months later.
