Production Details Handpicked whole bunch grapes pressed to create dry, crisp base wine with low alcohol and fresh acidity. First fermentation in stainless steel, base wine spent 6 months on lees before racking and stabilization. Second fermentation in bottle with 18 months sur lie aging. Each bottle hand-riddled, disgorged, and corked.
