Production Details Handpicked grapes. Largest component fermented in closed tanks with regular pump-overs. Small portion fermented whole bunch in open fermenters with manual punch downs. Matured for 12 months in 500 litre barrels: 25% new, 25% 2nd fill, 25% 3rd fill, 15% 4th fill French oak barrels, and 10% in 2700 litre foudre.
