Production Details Handpicked grapes, fermented in stainless steel with regular pump overs during fermentation. Left on skins for four weeks post-fermentation to maximise extraction. Malolactic fermentation in stainless steel. Matured for 15 months in 225L French oak barrels: 75% new, 15% 2nd fill, 10% 3rd fill, then blended and bottled.
