Production Details Single-vineyard Muscat de Frontignan bush vines. Grapes were harvested at 28-32 degrees Balling when some berries had already become raisiny. After crushing and destemming, the fruit was pumped to rotor tanks and cooled to 7-9 C to extend skin contact. Sugar was tested three times per day so fermentation did not exceed 0.5 degrees Balling, then stopped with wine spirit. The wine was stabilised and filtered before bottling.
