Production Details Night harvest at 18-22° Balling with dry ice transport to reduce oxidation. Crushing and de-stemming with 24 hours skin contact. Free-run juice cooled to -4°C for 3 weeks, then fermented in stainless steel tanks for 3 weeks. Protein and cold stabilization prior to bottling.
