Production Details Harvested completely by hand at night, destemmed and optically sorted, fermented in small batches. After approximately 21 days on skins, gently pressed and transferred to French oak barrels (approximately 80% new). Aged for approximately 21 months in oak. Bottled in July 2021. Production: 2,000 cases.
