Production Details Selected blocks green harvested during véraison in August. Hand-harvested in small boxes, hand-sorted, chilled before pressing. After settling, fermentation with indigenous yeasts at 13-14°C. Tanks topped and hand stirred for 6 months. Minimum filtering during bottling.
