Production Details Green harvested end of July during véraison to reduce yield to 4-5 tons/hectare. Hand-picked grapes in small boxes, hand-sorted, gently de-stemmed and lightly crushed into traditional Georgian Qvevri buried in cellar floor. Fermentation with natural yeast from grape skins at maximum 26°C, 6 months maceration in Qvevri with hand punch cap management only. Transferred to new oak barriques for 24 months maturation. Bottled unfiltered with 6 months bottle aging.
