Production Details Green harvested during véraison (August) to reduce yield to 4-5 tons/hectare. Hand-picked grapes in small boxes, hand-sorted, gently de-stemmed and lightly crushed into traditional Georgian Qvevri buried in cellar floor. Fermentation with natural yeast from grape skins, 6 months maceration in 10 Qvevris with hand punch cap management only. Transferred to new oak barriques for 6-8 months maturation. Light filtration before bottling and 6 months bottle aging.
