Production Details Grapes harvested and sorted by hand, then macerated for 20-30 days in temperature controlled stainless steel vats at 28-32°C with fermentation lasting 3-4 weeks. Malolactic fermentation takes place in tank. Wine aged in French oak barrels (80% new) for 18 months.
